Anita's crushing on this recipe for gluten free naan bread
GLUTEN FREE GARLIC NANN
2 ¼ t Active dry yeast
1 cup warm water (100 degrees)
¼ cup maple syrup
1 large egg, beaten
1 t salt
1 ¾ cassava flour
1 ¼ cup almond flour
1 cup arrowroot flour
1/3 cup minced garlic
Butter for garnish
½ c chopped cilantro for garnish
• In a large bowl, dissolve yeast in warm water. Let sit in warm area (about 80 degrees) about 5 to 10 minutes. Stir in maple syrup, egg, salt, both flours, and arrowroot until a soft dough forms. Place dough in a bowl, cover and place in a warm place (on top of the referigerator works) for about an hour.
Using your hands, shape dough into a long rectangle and cut into 12 equal portions, duing with cassava flour as necessary.
• Lay one portion of dough o a sheet of parchment paper, sprinklw with a teaspoon of garlic, and cover with another sheet of parchment. Using a rolling pin, roll dough into an oval shape about ¼ inch thick. Place skiller over medium-high heat. Add olive oil. Remove top layer of parchment and, place your hand under bottom layer of parchment, flip dough onto skillet, remove parchment and cook until bottom is golden and blackened in spots, about 4 minutes. Flip naan and cook for 2 to 3 minutes more, until lightly browned and blistered. Remove naan from pan, brush with butter, sprinkle with cilantro, and serve warm. Repeat with remaining portions of dough.
• Place cooked naan on a baking sheet in the oven to keep warm until ready to serve.
